Dubbeldonker (double dark) refers to the combination of wholegrain flour and rye flour in a ratio that produces a very dark crumb with a distinctively malty, slightly sour flavour. The darkness comes from the high rye content and the use of dark malt extract rather than food colouring.
Ingredients
Wholegrain rye flour (40%), wholegrain wheat flour (40%), water, yeast, sea salt, dark malt extract, sunflower oil. Contains gluten.
Serving
Particularly good with strongly flavoured toppings: mature aged cheese (old Amsterdam, old Rembrandt), smoked meat, mustard, or herring. The robust flavour stands up to where a white or standard brown bread would be overwhelmed.

Very high dietary fibre (8g+/100g). Rich in B vitamins, particularly niacin and B6 from rye. The highest mineral density of the Artisan Baker range.
Storage
Store in a cool, dry place or in the bread bin. Best within 3–4 days of baking. Freeze in slices for up to 2 months; toast directly from frozen for best results.
