What Burrata Actually Is
The Shell — A thin sheet of fresh fior di latte mozzarella, hand-shaped into a pouch; the mozzarella is pulled and stretched while still warm to create the elastic, smooth outer shell.
The Filling (Stracciatella) — Shredded mozzarella mixed with fresh cream; the "stracciatella" filling is the heart of the burrata — liquid, rich, and intensely milky when the cheese is cut open. "Burrata" means "buttered" in Italian — a reference to the richness of the cream filling.
Freshness is Everything — Burrata has a shelf life of 3–5 days from production; this is not a product that improves with age. The fresher, the better. Galbani's supply chain is engineered to minimise time from production to consumption.
Ingredients — Pasteurised cow's milk, cream, salt, rennet. No preservatives, stabilisers, or additives.
How to Serve
Remove from the refrigerator 30 minutes before serving — burrata should be at room temperature to allow the filling to soften fully and the flavour to develop. Place on a plate, tear or cut open to allow the filling to flow, drizzle with premium extra virgin olive oil and Maldon sea salt. Serve with heirloom tomatoes, grilled peaches, or on bruschetta with a drizzle of balsamic reduction. Eat immediately after opening.
Storage
Refrigerate at 2–4°C. Consume by the date printed on the pack. Do not freeze — freezing destroys the texture irreparably. Once opened, consume immediately.
