Olio Nobilis — a blend of extra virgin olive oils from Terre Francescane, sourced from the olive groves of Umbria and central Italy where the Franciscan tradition of land stewardship has shaped the production philosophy for centuries.

The Olive Oil

  • Extra Virgin Classification — Cold-pressed at below 27°C within 24 hours of harvest; the most rigorous production standard for olive oil. Free acidity below 0.8% (the legal maximum for extra virgin classification), typically below 0.3% in premium lots.
  • Blend Composition — A blend of Moraiolo, Frantoio, and Leccino olive varieties from certified Umbrian and central Italian groves; Moraiolo contributes peppery intensity and polyphenol richness, Frantoio provides the fruity, grassy character, Leccino adds mild sweetness and approachability.
  • Polyphenol Content — The high polyphenol concentration (oleuropein, hydroxytyrosol) provides the characteristic throat-prickling sensation of high-quality central Italian EVOO and the documented cardiovascular health benefits associated with Mediterranean diet olive oil consumption.

How to Use

Use as a finishing oil — drizzle over bruschetta, grilled vegetables, white beans, soups, and grilled meat immediately before serving. The volatile aromatic compounds that make premium EVOO special are destroyed by cooking at high temperatures; use a neutral oil for frying and save Nobilis for raw or cold applications.

Storage

Store in a cool, dark cupboard away from heat sources. Use within 18 months of harvest date (printed on label). Once opened, consume within 3 months for optimal quality. Never refrigerate — cold causes temporary cloudiness (harmless but aesthetically poor) and slows pour.
