What are Pappadums?
Pappadums (also papadum, poppadom) are thin, crisp flatbreads made from urad dal (black gram lentil flour) and shaped into rounds. They are one of the few Indian flatbreads that are not yeast-leavened or heated on a tava — instead, they are dried and then either deep-fried, dry-roasted in a pan, or microwaved to puff and crisp.
Ingredients
Black gram flour (urad dal), rice flour, sunflower oil, salt, cumin. Free from wheat/gluten. Vegan.
Preparation
Microwave: 30–40 seconds on full power between two sheets of kitchen paper. Pan-fry: 20–30 seconds per side in a dry non-stick pan over high heat. Deep-fry: 10–15 seconds in 180°C oil. The microwave method produces the most consistent result with the least oil.
Serving
Serve as a starter before curry, as a table snack with mango chutney and mint raita, or crumbled over salads and dhal for texture. The natural variant provides the base urad dal flavour without the distraction of additional spices — a blank canvas for accompanying condiments.
